Matt and Emily Strysik, of Bourbonnais, stand in the future home of their nano brewery, Knack Brewing & Fermentation, an eventual 4-barrel-per week brewpub at 789 S. McMullen Ave. The couple aims to open for business on Kankakee’s west side by May or June of this year.
